To me, this is the best salad there is when it is made properly.
Ingredients
- 2 pcs romaine lettuce
- 2 pcs chicken breast
- 150 gram bacon
- 40 gram parmesan
- 1 pcs red onion

Caesar dressing
- 2 pcs egg yolks
- 3 tsp dijon mustard
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- 1 cloves garlic
- 2 dl neutral oil
- 40 gram parmesan
- cayennepepper
Croutons
- white bread
- butter
- 1 cloves garlic
- salt and pepper
The delicious combination of bacon and chicken makes this a classy salad in itself. If you have not tried to make this before, it's time. The good caesar dressing mixes well with the crispy salad.
Step 1
It is important that you treat all the ingredients in the best possible way to get a good result. Crisp the bacon, rinse the salad well and put in ice water to be as crispy as possible, cut nice cubes of tomatoes and cucumber. I like to have thin slices of red onion and some chili, but that is not in the original recipe. Fry the chicken fillet and make sure that the chicken does not get dry. In this dish, most things can be prepared in advance. Now only the fun part is left. Finish the salad, serve and enjoy the food !!

Caesar dressing:
Start by pouring 2 egg yolks into a large bowl. Add Dijon mustard, crushed garlic clove, 1 teaspoon white wine vinegar and a little lemon juice. Stir well and dilute slowly with the oil. If the dressing becomes too thick, you can add a little cold water (not much). Then add about 40 grams of finely grated parmesan and season with salt, pepper and lemon juice. Now the dressing is done.
Step 3
Making croutons is very easy and much better than the ones you buy at the store. Start by cutting 5-6 slices of the bread and cut into cubes. Place the dice on a tray or rack in the oven at 160 degrees and bake for about 10 minutes. Put the bread cubes in a pan with a little good butter or oil and a clove of garlic. Cook until golden. Add a little salt and pepper.
Step 4
Mix the romaine lettuce well with the dressing and place on a plate. Put nicely on the bacon, chicken fillet, onion, tomatoes, chili and croutons. Take a little extra dressing around the plate, a few drops of olive oil, salt, pepper, lemon zest and finish with a little grated parmesan. Now the caesar salad is ready to be served.
