- 200 gram crayfish tails
- 1 tbsp olive oil
- 2 pcs shallots
- 2 cloves garlic
- 50 gram parmesan
- 1 tsp chiliflakes
- 1 pinch saffron
- 2 dl lobster broth
- 3 dl whipping cream
- 1 tsp lemon juice
- 2 tbsp finely chopped dill
- salt and pepper
This dish is magically good! Delicious creamy sauce, silky soft pasta and crayfish. It is not difficult to understand that this dish tastes good. The sauce gets a taste and the great color of saffron. In addition, there is lobster broth, cream and chili. The whole dish is topped with fresh dill. After I tried this for the first time, it has become one of my pasta favorites. I also made a video that shows the whole process.
Step 1
Start by finding a saucepan with a high edge or a pot. Add a little olive oil, shallots, garlic, chili flakes and saffron. Cook on medium heat until the onion has become shiny and soft. Add whipped cream and lobster broth, and cook for about 10 minutes until the sauce begins to thicken a little. Add grated parmesan and stir into the sauce so it melts.
Step 2
Choose a good pasta. Today I have chosen "small butterflies" pasta to which the sauce adheres very well. Boil plenty of water and add a little salt to the water. Cook the pasta 2 minutes less than it says on the package so it is a bit "al dente". Al Dente means that it has some chewing resistance / undercooked. The pasta should be boiled a little with the sauce at the end.
Step 3
Taste the sauce with lemon juice, salt and pepper. Strain the crayfish tails and add the sauce. Pour the water off the pasta and add the pasta to the sauce as well. Mix well. Finely chop some fresh dill and mix in the sauce just before serving. This means that the dill retains its fine color and has a fresher taste.
Step 4
Now this delicious pasta dish is ready to be enjoyed. Pour a little onto a plate and garnish with a little extra dill. Good luck.
