Ingredients

This is one of Europe's most popular street food dishes, but how do you make this at home? I have tried several varieties and types to mimic the thin slices of grilled minced meat that you get out. They have crust on one side and juicy on the other. Dönerkebab is known for standing on horizontal large skewers and it is difficult to make at home. After a lot of searching online and testing at home, I have now found the perfect method. The taste, feel and texture are just like you get in a real Dönerkebab place. In addition, you can know with confidence what the kebab meat contains.

Step 1

To make this product you need lamb mince. This has a high fat percentage and gives the right taste and consistency. It is important that the meat is cold when it is to be mixed together. Put the meat in the baking dish of your food processor.

Step 2

Mix together Greek yogurt with homemade kebab seasoning.

Step 3

Mix the spicy yogurt mixture together with the meat to run to a smooth stuffing.

Step 4

Press the stuffing into a greased baking dish and cover with aluminum foil. Take a few holes in the foil and put in a preheated oven at 180 degrees hot air. Let cook for 1 hour.

Step 5

Remove the foil and divide the meat into 4 equal parts. IMPORTANT: Save on the fat that has remained in the pan. This has an incredible amount of flavor, and when we are going to roast the meat we use this.

Step 6

When the meat has cooled down a bit, wrap it in foil and place in the fridge. When the meat is cold, it is easy to cut it into thin strips. What you are not going to use now you can freeze until you feel like kebab next time.

Step 7

Cut the cold meat into as thin strips as you can and break into slightly smaller pieces. To prepare the meat for serving, you can either use a pan or grill plate. Heat the pan to high heat. Add some of the fat that was left in the pan when you fried the meat and fry the meat until they become crispy and juicy. Now the meat is ready and can be used for kebabs or stuffed in pita bread or sandwiches. This minced meat is how Dönerkebab should taste. Meat, spices and yogurt and no other nonsense. Good luck.
