Enchilada - with meatfilling and baked in the oven

  • 4 pcs big tortillas
  • 800 gram meat filling
  • 200 gram cheese
  • sour cream
  • lime
  • chili

Meat filling (cowboy stew)

  • 400 gram minced meat
  • 100 gram bacon
  • 1 pcs onion
  • 3 cloves garlic
  • 1 can beans in tomato sauce
  • 1 pcs sweet peppers
  • 25 gram tomatopure
  • 1,3 dl chicken broth
  • 1 tsp brown sugar
  • 1 tsp cummin
  • 0,5 tbsp worchestersauce
  • 0,5 tsp chilipowder
  • salt and pepper

Step 1

The meat filling in this recipe is the same as my Cowboy stew. I always make a double portion of cowboy stew, save half and make an enchilada with the leftovers. Smart method to save time making two dinners at once.

Step 2

Find a large ovenproof form and put in a little neutral oil. Distribute the meat filling in the tortillas and close them. Place the joint in the bottom of the form. This prevents them from opening when you put them in the oven.

Step 3

Bake at 225 degrees Celsius hot air for 15-20 minutes until the cheese has melted and begins to turn golden.

I think it is very good to serve Enchilada with a little sour cream, chili and lime slices. It is also good with a fresh salad. Good luck.
