Farmer Omelette - The traditional and smart leftover dinner!

One of the biggest climate problems of our time is due to food waste. In Norway, huge amounts of food are thrown away that could have been eaten every single day. The previous generations were far better at having little food waste. This classic dish is simple, good and perfect for using up leftover meat and vegetables from the fridge. Farmer's omelette is easy to make, tastes good and good with nutrition, so if you have not made this dish before, it's time.

Step 1

Start by setting the oven to 200 degrees hot air and find a baking pan. The size of the baking pan will depend a bit on how many you make. For 4 people for whom I made the dinner, it fits with a "half baking pan" with a high edge. Grease the pan with butter or olive oil, this means that the food is not stuck in the pan afterwards.

Find the remains of meat, potatoes and other vegetables and cut into suitable pieces. A fitting bite in this case is a little under a mouthful. Find a frying pan and fry meat and vegetables on a little high heat until it gets a crust. This gives a better consistency and taste. Vegetables that have already been cooked need shorter cooking time than raw.

Step 3

Find a bowl and add eggs, salt, pepper, (milk or water) and baking powder. Whisk this well together to a fluffy mass.

Step 4

Put the fried vegetables in the pan and pour over the egg mixture. Stir gently and make sure that the vegetables and meat are evenly distributed in the pan. I think it is very good with a little grated cheese on top. Here you can of course also use cheese crusts etc ... I had some cheddar cheese I left over before frying.

Step 5

Bake the omelette for 20-25 minutes until firm. Let the farmer's omelette rest for 10 minutes before cutting it up. It is also good with some bread with butter or salad next to it. If there are any leftovers from the omelette, this is perfect in a packed lunch or for lunch. Good luck.
