Fillegris / Pulled Pork - In time, this cheap raw material will be fantastic!

Fillegris is the Norwegian name for Pulled Pork. I do not know if the name is completely correct, but I like it very much.

Fillegris / Pulled pork

  • 5 kg pork neck
  • 3 dl orange juice
  • 1 dl soy sauce
  • 1 dl apple cider vinegar
  • 1 dl brown sugar
  • spice mix

Spice mix

  • 3 tbsp smoked peppers
  • 3 tbsp cayenne pepper
  • 2 tbsp salt
  • 2 tbsp sugar
  • 1 tbsp cummin

Fillegris became very popular about 2 years ago and it is not without reason. This dish is incredibly tasty and can be used in many dishes. Fillegris fits perfectly between two hamburger breads together with a good BBQ sauce, together with the barbecue accessories, in a salad, etc. Use your imagination and use Fillegris in many different dishes. Fillegris is made from pork neck which is a cheap raw material. It takes a long time, but is very little work! Here is my recipe for Fillegris.

Start by taking out the pork neck and place in a deep pan. Then you can make the spice mix.

Take all the ingredients for the spice mix in a bowl and mix them well.

Rub the meat well with the spice, making sure everything is covered with spices.

Pour all the wet ingredients into a bowl, stir well and pour into the bottom of the pan. This is so that there will be moisture in the oven and it becomes the "sauce" for the meat when it is done. Now most of the work is actually done.

Set the oven at 100 degrees and insert the pan. After 6-7 hours I set the temperature to 90 degrees. In total, the meat should be left in the oven for 18 hours. It does not matter if it is a little shorter or longer. Turn the meat a few times during the cooking time.

After about 18 hours in the oven, the pulled pork is ready. Take the pan out of the oven and find two forks. Now the meat is so tender that you can tear it into pieces :-) When you tear up the meat, mix it with the good sauce that has formed at the bottom of the pan.

Then you get an extremely juicy and tender result. My favorite is along with the homemade coleslow and BBQ sauce. Good luck.
