Gladkokken's pickled cucumber mix - Perfect accessory for sausages and barbecue food

  • 5 pcs cucumbers
  • 1 pcs onion
  • 1 pcs red onion
  • 2 pcs sweet peppers

Jam pickle with spices

  • 2,5 dl 7% vinegar
  • 1 dl apple cider vinegar
  • 5 dl sugar
  • 1 dl water
  • 1 tbsp mustard seeds
  • 1 tbsp chili flakes
  • 1 tbsp jam powder
  • 1 tsp pepper
  • 1 tsp salt

The perfect accessory for sausages, burgers and other barbecue food. I have taken a combination of the popular Swedish Bostongurka and what they in the US call Sweet pickle relish. Sour, sweet and crispy! This recipe has a very long keeping quality and with a glass of this in the fridge you can transform some boring grilled sausages into the taste of gourmet food.

Step 1

There is a bit of work in finely chopping all the vegetables, but here it is important that it is cut nicely. You want all the pieces to contain a little of everything in the mix. I start by scraping out the core of all the cucumbers and finely chopped into small cubes. Put everything you have cut in a large bowl.

Cut up the onion and sweet pepper and place in the bowl.

Find a large pan and pour everything into the jam pickle with spices in the pan. Turn on the heat and bring to a boil so that the sugar is completely melted.

Step 4

Add the finely chopped vegetables and mix well. Let the jam pickle boil again and let the whole mixture cook for about 8 minutes. Pour in the jam powder, stir well and cook for another 2 minutes. Now the mixture is ready and can be poured into clean glasses.

Step 5

Allow to cool on the bench before placing it in the refrigerator. The jam powder makes it harden, so stir well the next day. Now the vegetables have been pickled and you have a wonderful jam mix to use for barbecue, salads or as an accompaniment to get some acidity in dishes. This only gets better and better when it is in the fridge and has a very long keeping quality. Good luck.
