Scallops with pea puree, browned soy butter and parmesan chips - Delicious flavor combination
I love fresh scallops!
Ingredients
- 4 pcs scallops
- pea puree
- browned soy butter
- parmesan chips
- a little fresh dill
Pea puree
- 200 gram frozen green peas
- 50 gram butter
- 25 gram grated parmesan
- salt, pepper and lemon juice
Parmesan chips
- 50 gram parmesan
Browned soy butter
- 50 gram dairy-made butter
- 2 tbsp soy sauce
This is an appetizer I have served many times and is always popular. When scallops are cooked properly, it is one of the world's best ingredients. Here served with a delicious pea puree with parmesan, browned soy butter and parmesan chips. A simple and good appetizer.
Step 1
Start by cleaning the scallops and make the pea puree. Boil the peas for 2-3 minutes and strain off the water. Add butter, finely grated parmesan and mix until smooth. If you want it completely smooth, you can push it through a strainer. Season with lemon juice, salt and pepper.
Step 2
To make browned soy butter, I start by putting butter in a saucepan. Put on medium + heat and melt the butter until it stops frying and starts to turn brown. Stir regularly so it does not burn. When the butter is brown and has a nutty smell take the pan off the heat. Allow the butter to cool slightly and whisk in the soy sauce. Then the sauce will thicken.
Step 3
To make parmesan chips, grate the parmesan. Spread on a baking tray with parchment paper and bake at 180 degrees for about 8 minutes until golden and crispy.
Step 4
Season the scallops with salt and pepper and pour neutral oil into a pan. Put on medium + heat. When the pan has become really hot, put the scallops in the pan. Let cook for 1-2 minutes so they get a nice crust. Turn down the heat, turn them over and add a little butter. It is very important that the scallops are not fried too much as they get a "rubbery" consistency. Put some pea puree on a plate, add some soy butter and add the scallops. Place parmesan chips next to it and garnish with a little dill. Good luck.
