Hasselback potatoes taste very good! This is a well-known accessory, but I think it deserves some attention. Here I show you some good tricks that make this accessory even better and easier to make. If you're wondering why they got the name Hasselback Potatoes, it's because it was a Stockholm restaurant called Hasselbacken that became known for this way of serving potatoes.

  • 2 store potatoes
  • 1 skive butter
  • 0,5 cloves garlic
  • 1 tsp olive oil
  • fresh thyme or other herbs

Start by washing the potatoes well and drying them. I do not peel the potatoes when I make Hasselback potatoes. Find a sharp knife and cut off some of the long side of the potato.

This way, it will be completely stable when you are going to fry and it will be easier to cut them up. A very smart trick to cut just as far down on the whole potato without you having to worry about cutting through the potato is to put a chopstick on each side of the potato.

Now just cut the potato down until the knife hits the chopsticks. I like that it is quite thin slices, but of course you can choose for yourself. Preheat the oven to 220 degrees hot air. Place the potatoes in a greased fireproof pan. Grease with a little good olive oil and season with salt and pepper.

When the oven is hot, insert the potatoes and set the clock at 30 minutes. After 30 minutes, I take out the pan and add butter, herbs and garlic if you like. I use a cheese grater to cut thin slices of butter and place a slice on each potato. With this trick, you get the butter evenly distributed and the delicious butter flows down into all the cracks. Add some herbs and some garlic.

Put back in the oven and cook for another 15 minutes. Pour over some of the spicy butter. Tip: If the rest of the dinner is not ready. Set the oven at 70 degrees and leave them there until serving.
