Healthy casserole with beef mince and vegetables - All in one casserole!

This is a delicious and warming casserole full of vegetables and flavors. It is very easy to make because everything is made in the same pan. So with this recipe there is almost no washing up and you fill your body with lots of nutrition and low calories. A simple and very good everyday dinner. Feel free to make a large portion so you have for a dinner or lunch for another day.

  • 800 gram beef mince
  • 2 pcs sweet potato
  • 2 pcs red onion
  • 2 pcs carrot
  • 1 pcs squash
  • 2 cloves garlic
  • 1 can chilibeans
  • 2 tbsp red currypaste
  • 1 can coconut milk
  • 3 dl chicken broth
  • salt and pepper

The beauty of this dish is that you make everything in the same pan. So here is a really just the order that is important to get the best possible result. Start by finding a large pan and add a little neutral oil and set the heat on high. Add the beef mince and cook until it has browned.

Then add the chopped red onion and cook for a few minutes.

When the onion has started to soften, it is time to add finely chopped garlic and curry paste / red curry. Let this cook for a few minutes while you cut up the vegetables.

Add the rest of the vegetables, chilibeans, coconut milk and broth. Stir well.

Let the stew cook for 20 minutes and now it is ready to be served.
