Healthy Chicken Casserole with Ginger - Perfect for hectic weekdays!
This dinner is perfect on days with a little bad time and you still want a good and nutritious dinner.
Ingredients
Chicken casserole
- 3 pcs chicken fillet
- 3 pcs carrot
- 1 pcs paprika
- 1 klump fresh ginger
- 1 pcs broccoli
- neutral oil for frying.
Cornstarch mixture
- 4 tbsp cornstarch flour
- 2 tsp turmeric
- 1 tsp chili powder
- 1 tsp salt
Sauce
- 5 dl chicken broth
- 2 tbsp cornstarch flour
- 2 tsp chili sauce
- 1 tbsp soy sauce
I am very fond of chicken and it is something we often use here at home. I make it in many varieties, but this one is very popular and easy to make. I think a little Asian flavors go well with chicken and this dish has a delicious taste of ginger and several good vegetables. Feel free to vary with the vegetables you have leftovers in the fridge. Making sauce this way is very easy!
Step 1
Start by finding a bowl and add the cornstarch, turmeric, chili powder and a little salt.
Step 2
Cut the chicken into thin strips and place in the bowl with the corn mixture. Mix well with your hands so the chicken is covered with this mixture.
Step 3
Find a frying pan with a high edge or a saucepan. Add well with neutral oil and set on high temperature (from 1-9 I use 8). Fry the chicken little by little until it has a nice color and is cooked through. Transfer the fried chicken to a plate or similar with kitchen paper so the fat drains off.
Step 4
Cut the vegetables into small pieces and divide the broccoli.
Step 5
Pour out unnecessary oil and leave a little in the pan so that there is only a little left. Add the vegetables and cook for a few minutes.
Step 6
Mix together chicken broth, chili sauce and soy sauce. Add cornstarch and whisk well to a smooth liquid. Pour this straight into the pan. The sauce thickens when the liquid boils. Let cook for 5 minutes.
Step 7
Put the chicken back in the pan and mix well. Turn down the heat and simmer for 5 minutes. Now the chicken casserole is ready to be eaten.
Step 8
I usually serve this dish with rice. If you have some fresh herbs such as coriander or similar, it is good to sprinkle just before serving. Good luck!
