Italian tomato soup with vegetables and salsiccia - Healthy and good everyday dinner!

By buying raw sausages, you get ready-seasoned meatballs in the soup!


  • 1 pcs onion
  • 4 cloves garlic
  • 2 tbsp tomato paste
  • 1 tbsp olive oil for frying
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp fennel seeds
  • 1 tsp chili flakes
  • 2 tsp oregano
  • 1 liter beef or veal broth
  • 0,5 liter vegetable broth
  • 8 pcs raw salsiccia sausages
  • 1 pcs squash
  • 4 pcs carrot
  • 1 pcs sweet paprika
  • 400 gram potatoes that can be boiled
  • 1 glass canned tomatoes
  • 800 gram fresh tomatoes


  • 50 gram grated parmesan
  • 1 handful fresh basil

An incredibly good tomato soup with plenty of vegetables and spicy salsiccia sausage. Buying raw sausages allows you to very easily squeeze the stuffing out of the sausage and straight into the soup. They transform into delicious spicy meatballs. There are many good flavors in this soup and fills both body and soul with joy. Finish with some finely grated parmesan and basil! Here I will show you how. The dish also has a video instruction that you can find further down in the recipe.

Step 1

I would recommend that you watch the video explanation before making the recipe, but I will also explain as simply as possible here. Start by finding a large pot and add olive oil. Put the pot on medium + heat. Cut up the onion and garlic and fry in the oil until glossy. Add the tomato paste and the spices and cook for a couple of minutes. Now pour over both meat broth and vegetable broth.

Cut the carrot, squash and potatoes into small pieces.

Add the vegetables to the soup and bring to a boil. When the soup has started to boil, cook the meatballs (sausages) in this broth. When you buy raw sausages, it is easy to pinch off small pieces straight into the boiling water. This gives good spicy meatballs and an extra good taste in the soup. Let the meatballs and vegetables cook for 15 minutes. Now put the peppers, tinned tomatoes and fresh tomatoes in a bowl and blend until smooth with an immersion blender. Pour this over the soup and stir well.

Now let the soup simmer for another 15 minutes. Season with salt, pepper and sugar for a nice balance. This will vary as there is a different salt content in the broth. Now this delicious Italian soup is ready for serving.
