Lamb shank - after a few hours in the oven it tastes heavenly.
Lamb shank is a cheap and popular raw material. When you first give this piece a few hours in the oven with good flavors, it becomes incredibly good!
Ingredients
The lamb
- 4 pcs lamb shank
- 3 pcs carrots
- 0,5 pcs celery root
- 2 pcs celery sticks (sticks)
- 1 pcs onion
- 4 cloves garlic
- 1 pcs red chili without seeds
- 2 dl white wine
- 0,5 liter lamb broth
- 1 can canned tomatoes
- 2 tbsp neutral oil for frying
- 2 tbsp smør til steking
The spice mixture
- 1 tsp salt
- 1 tsp pepper
- 2 tsp crushed coriander
- 2 tsp cumin
- 1 tbsp paprika
- 1 tbsp fresh rosemary
- 1 tbsp fersk timian
Gremolata
- 1 bunt fresh parsley
- 2 pcs lemon (peel only)
- 5 cloves garlic
Lamb shank is the leg of the lamb. A little tread muscle, but with a little time this becomes so juicy and tender. It is no longer a job to make lamb shanks, it just takes a little more time. Step 1
Start by rolling the lamb shanks in wheat flour mixed well with salt and pepper. Find a large good frying pan and fry the lamb shanks on high heat until they get a little frying crust in the pan. Step 2
Find a good pan and add finely chopped carrots, onions, celery, celery sticks and garlic. Fry in oil on medium heat for a few minutes until it becomes a little softer to get a golden color. Then you pour in the white wine and let it reduce until there is only a little left.
