Lemon Cake - Sour, sweet and juicy!

I love a good lemon cake!

Ingredients

Cake batter

  • 200 gram room tempered butter
  • 200 gram sugar
  • 200 gram wheat flour
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 1 dl lemon juice (ca. 4 pcs lemon)
  • 3 pcs egg yolks
  • 3 pcs egg white (whipped)

Icing

  • 50 gram icing sugar
  • 2 tbsp lemon juice

Pickled lemon peel

  • 4 pcs lemon (peel only)
  • 2 dl water
  • 1 dl sugar
Ingredients

This recipe is very good and easy to make. I really like the taste of lemon and this is a great cake to make if you want something good for your coffee. The cake is sour, sweet and juicy. Topped with a sour icing and pickled lemon peel.

Step 1

Start by whipping butter and sugar until it becomes a fluffy and white mass.

Step 2

Separate the egg whites from the yolk and whisk one of the egg yolks into the cake batter.

Step 3

Measure out and mix together flour, baking powder and vanilla sugar. Sift this into the batter and continue whipping. When the flour is evenly mixed in the batter, sprinkle with the lemon juice while stirring.

Step 4

Beat the egg whites until they are white and stiff. Mix the cake batter and the beaten egg whites with a spatula until you get a nice and even batter.

Step 5

Use a medium cake tin and cover with baking paper at the bottom and along the edge. I use a little cooking spray that sticks so the paper sticks to the cake tin. Pour the batter into the cake tin and distribute evenly in the tin. Place the cake in a preheated oven at 180 degrees hot air (in the middle of the oven), and cook for 40 minutes. Allow the cake to cool completely before applying the icing.

Step 6

To make pickled lemon peel, peel all the lemons. Make sure you do not get the white, but only the peel. Fill a saucepan with a little water and bring the water to a boil. Pour in the strips of lemon peel and cook for 5 minutes. Pour off this water and top up with sugar and water as in the recipe. Simmer until the liquid is almost gone and it becomes a sticky / caramelized consistency. Take out the peel and place on a roll of kitchen towels or baking paper. Let the lemon peel cool completely before placing it as a decoration on the cake.

Step 7

The icing is very simple and good. Mix together the icing sugar and lemon juice. Pour over the cake (the cake must be cold) and top with the pickled lemon peel. Now the cake is ready for serving. Divide into fine pieces and enjoy a sour, sweet and juicy lemon cake. Good luck.
