Norwegian meatball soup with vegetables - Healty and tasty

Traditional Norwegian pork meatballs in a tasty broth.




  • 900 gram minced meat of pork
  • 2 tsp salt
  • 2 tsp malt nutmeg
  • 1 tsp ground ginger
  • 2 tbsp finely chopped parsley
  • 0,5 tsp cayenne powder
  • 2 tbsp potato flour
  • 2,5 dl milk


  • 2 pcs onion
  • 2 tbsp butter
  • 4 pcs potatoes
  • 1 pcs celery
  • 4 pcs carrots
  • 2 liter chicken/meat broth
  • salt and pepper
  • chopped parily

A lovely soup with delicious and juicy pork meatballs. These are easy to make and when they simmer in the broth, the whole soup gets a very good taste. The trick to get the best taste is to be patient with browning the onion. Serve with flatbread and good butter.

Step 1

I start by finding a large pot since the whole dish will be made in one pot. Add the butter and set on medium heat. Cut the onion into thin strips and place in the pan. Add a little salt and stir occasionally. Fry the onion until it have a nice and golden color. This gives a very good sweetness and taste. When the onion is done, I pour the broth straight into the pan. Now use a hand mixer to mix the onion and the broth.

Step 2

Put the minced meat of pork in the food processor and add the salt. Run for a few seconds at high speed so you see that the salt is well mixed in and the minced meat becomes a little more chewy. Now add in all the spices and potato flour. Mix well and dilute with ice-cold milk. Finish with finely chopped parsley and mix for a few more seconds. Now the doughis ready.

Use wet and clean hands. Form meatballs and place straight in the pan with the hot broth. You can choose the size yourself.

When all the meatballs are in the stock, these should simmer for about 30 minutes. So I start peeling and putting the vegetables in the broth when they are done. The vegetables need about 20 minutes. Now this delicious meatball soup is ready to be enjoyed. Serve with flatbread and good butter. Good luck.
