Mexican "all in one pan" with the sweet potato - delicious, healthy and good everyday dinner
Stews are very good and I like "everything in one pan". This makes it easy to use only one pan. This stew has a delicious taste of tomato, meat, sweet potato and the typical Mexican taste.
Ingredients
- 1 pk beef mince
- 1 pcs onion
- 3 pcs carrot
- 1 pcs red pepper
- 2 pcs chili (more if you want it stronger)
- 2 pcs sweet potato
- 1 can canned cherry tomatoes
- 1 can chilibeans
- 1 tsp salt
- 1 tsp pepper
- 2 tsp sugar
- 1 tbsp cummin
- 1 tbsp tomato puree
- 7 dl chicken broth
- 1 kneve cashews nuts (optional)
I love spicy food, but here you can adjust the strength with how much chili you add. Here you get beef mince, lots of vegetables and a good broth. One of the best things about this dish is that you use only one pan and after 20-25 minutes you can serve a good and nutritious dinner.
Step 1
Start by finding a pan and add a little neutral oil. Heat the pan. Cut onion, carrot and chili into cubes / small pieces. Add to the pan and stir.
Step 2
Then add the paprika, the beef mince and the sweet potato. Continue to cook until the beef mince has been fried.
Step 3
Add tomato puree, canned tomatoes and chilibeans. Stir well and cook for a few minutes.
Step 4
Add the spices, the chicken broth and the sweet potato in cubes, and cook for 15 minutes.
Step 5
Just before serving, pour in cashew nuts. Serve piping hot. Good luck.
