Homemade Indian - Butter Chicken is my favorite!

I think Indian food is incredibly good sometimes. Of course it is nice to go to a good Indian restaurant, but you can make wonderful Indian food at home as well. Indian food is a collective term for food and food culture from the different cultures in India and the surrounding countries. For example, Pakistani and Indian food are almost exactly the same. The food is characterized by good sauces and the use of a lot of tasty spices. I think Indian food should be quite spicy, but you can customize the strength of the dish to your liking. My recipe I would say is a "Norwegian strong" strength. If you have not tried to cook Indian food at home yet, it is really time.

Marinade

  • 3 dl yogurt natural
  • 4 cloves garlic
  • 1 klump grated fresh ginger
  • 1 pcs lemon (juice)
  • 1 tbsp chili powder
  • 1 tbsp turmeric
  • 1 tbsp garam masala
  • 2 tsp salt
  • 1 tsp sugar

Recipe sauce

  • 1 pcs onion
  • 5 cloves garlic
  • 3 pcs red chili
  • 1 can canned tomatoes
  • 1 tbsp coriander seeds
  • 3 pcs cardamom seeds
  • 0,5 tbsp whole black pepper
  • 1 tbsp turmeric
  • 1 tbsp chili powder
  • 1 tsp cinnamon
  • 3 dl whipping cream
  • 150 gram butter
  • 0,5 pcs lemon (juice)
  • fresh coriander

Step 1

You have to start by making the marinade. I think the best result is when the chicken is enjoyed in the marinade for about 12 hours. I make this the day before I am to serve the dish. Divide the chicken into suitably large pieces. Mix together all the ingredients for the marinade and mix well in a bowl. Put on plastic wrap and put in the fridge.

When you make the sauce, I start with a dry frying pan and add all the spices. Fry the spices on medium heat until you feel the smell spread well throughout the room. This takes about 5 minutes. When you fry / heat spices, you get more and better taste from the spices. When the spices are done, pour them into a mortar / bowl and crush them to a powder. You can also use a blender or coffee grinder.

Use the same pan and add 2 tablespoons of butter. Add finely chopped onion, chili and garlic. Let the onion fry until golden before adding the spices you have just crushed. Bake for a few more minutes. Add the canned tomatoes, lemon juice and whipped cream. Save 1 tablespoon of cream to garnish the dish at the end. Let the sauce cook for 20 minutes.

Use a hand mixer and run the sauce completely smooth. Strain the sauce through a fine-mesh strainer. The sauce should be completely smooth. Turn down the heat to just below boiling point and stir cold butter cubes into the sauce. Take a little and a little of the butter and stir until it is melted before adding more butter. This gives a wonderfully shiny and delicious sauce. The chefs call this method to assemble a sauce with butter.

Grill the marinated chicken on high heat in the oven until it has a golden color, but does not need to be cooked through. Add the chicken with the marinade to the sauce and simmer for another 25 minutes. Season with salt, pepper, lemon and chili. As with all other foods, it is important that the dish has a good balance. It is the combination of the strong, sweet and sour that creates this balance. Try until you get a perfect dish for you. Just before serving, pour in finely chopped coriander. Shake the last tablespoon of cream and pour into small strips over the dish. This tastes good and looks very nice. Serve with rice. It is also very good with Naan bread and raita. Good luck.
