Princes cake - Norwegian cake tradition at its best!

This classic is really good!

Ingredients

Princes cake 25 cm tin

Soft puff pastry

  • 4 pcs egg yolks
  • 200 gram sugar
  • 200 gram room temperered butter
  • 275 gram wheat flour
  • 2 tsp baking powder
  • 1 pcs fresh vanilla pod

Almond filling

  • 250 gram almonds
  • 110 gram sugar
  • 110 gram brown sugar
  • 2 tbsp melted butter
  • 2 pcs eggs
  • 1 tbsp cognac

Brushing

  • 1 pcs egg
  • 1 tbsp milk
Ingredients

Princes cake has a bad reputation among many and is a Norwegian classic! A homemade Princes cake tastes incredibly good. Delicious puff pastry with a juicy almond filling. Here is my version of this classic.

Step 1

We start by making the soft puff pastry. Start by whipping room tempered butter and sugar to an even and light color. Divide the vanilla pod and scrape out the seeds. Add this to the bowl. Add one egg yolk at a time while stirring between each. Mix together wheat flour and baking powder and sift this into the mixture. Knead together to a smooth dough with your hands. Remove 2/3 of the dough and make a lump. Then take the rest of the dough and knead together. Wrap both tightly with plastic wrap and refrigerate for 30 minutes.

Step 2

Now we are going to make the delicious almond filling. Start by running almonds in a blender to the consistency of coarse sand.

Add eggs, sugar, butter and cognac. Continue in the blender until smooth. Pour this into a bowl ready for afterwards.

I use pie tin with a loose bottom that I grease well. Roll out the dough to a little larger than the tin and place in the pai tin. Press into the tin so that the bottom is even and about 3 mm thick. It is important that it is also pressed upwards on the edge of the pie tin. 2-3 cm upwards on the edge is suitable so you have room for the filling. Now put the puff pastry finished in the tin back in the fridge. It must be left there for 1 hour.

Take the pie tin out of the fridge and distribute the almond mass evenly.

Roll the last part of the dough into a rectangle that is about 2 mm thick. Use a sharp knife and cut straight strips. Place these on top of the cake in a cross pattern.

Bake the princes cake in a preheated oven at 175 degrees over and under heat. I place it on the bottom groove of the oven. Let cook for about 45 minutes. Leave the tin for a while before gently tilting it out.
