Pytt i panne - An almost forgotten Norwegian classic
I often ate this as a child. I was slightly shocked when I found out that my 13-year-old son had never heard of "pytt i panne". Then I decided that this dish must be shared.
Ingredients
- 5 pcs potatoes
- 4 pcs meat sausages
- 3 pcs beefburgers
- 1 pcs onion
- 1 pcs carrot
- 0,5 pcs squash
- 1 pcs spring onion
- 2 tbsp butter
- 1 tbsp neutral oil
- 6 pcs sugar peas
- a little fresh thyme
- salt and pepper
This is a traditional Norwegian dish that combines fried potatoes, onions and meat. I always add vegetables that give a good taste. The dish is perfect for using up leftovers from the fridge. The Danes call this dish "biksemad" and are often served with a fried egg on top. In this recipe, it is not important to follow the recipe exactly, but order is key since some ingredients need longer cooking time than others.
Step 1
Start by finding a large and a good frying pan. I always use an iron pan when I make this dish. Turn on high heat and add a mixture of neutral oil and butter. You want to get crust on the things you fry in the beginning. I start by cutting potatoes into small cubes and adding to the pan. The potatoes are the ones that take the longest time.
Step 2
When the potatoes have started to get a golden crust, I add the onion and carrot. You want the onion to be a little brown as well and the carrots need some time to become suitably soft.
Step 3
I think the combination of beefburgers and sausages fits perfectly in a "pytt i panne". I fry the sausages on high heat in a separate pan before I add them to the other frying pan. As I mentioned earlier, the crust is the key to making a really good "pytt i panne".
Step 4
Cut all the food into small cubes. Here I have cut up squash and beefburgers. Add to the pan along with the other. Season well with salt and pepper along the way.
Step 5
At the end of the cooking time, I added spring onions and some sugar peas I had cut up. It's nice that there are some elements in the dish that have a bit of chewing resistance and are a bit crispy.
Step 6
Season with salt and freshly ground pepper. Turn the heat down to just below medium and let stand for 5 minutes. Just before serving, I add some fresh herbs if you have it available. It is also good to have a fried egg on if you like it. Add some BBQ sauce, ketchup or eat without anything. This is a good dinner that both young and old like. Good luck.
