Ratatouille - The healthy accessory that fits almost everything!
Originally, this vegetable stew comes from Provence in France. There are extremely many ways to make this dish and my variation is a bit simplified compared to the original, but still tastes incredibly good!

- 5 pcs tomatoes
- 1 pcs squash
- 1 pcs eggplant
- 1 pcs onion
- 4 cloves garlic
- 1 can canned tomatoes
- 1 tsp sugar
- 1 tbsp red wine vinegar
- 1 tbsp good olive oil
- 2 tsp dryed oregano
- 0,5 tsp cayenne pepper
- salt and pepper
The great thing about this dish is all the delicious vegetables you get. Make a large portion and you have several days, because this is very good, healthy and easy to make. This is simple and can just as easily be served for a feast as everyday food. Feel free to make more than you need. The great thing about Ratatouille is that it goes just as well with meat as fish.
Step 1
Start by finding a frying pan and pour in a little good with olive oil. Put the frying pan on medium heat.
Step 2
Finely chop the onion and garlic and place in the pan. Let simmer for a few minutes while cutting up the rest of the vegetables. Cut everything into suitable cubes. Add squash and eggplant and cook for about 5 minutes.
Step 3
Sprinkle with sugar, salt, pepper and red wine vinegar. Let fry for 1 minute before pouring in tomatoes, canned tomatoes and spices. Taste if it needs more salt or sugar.
Step 4
If you think the dish is well balanced, pour it into a fireproof pan and bake at 180 degrees for about 30 minutes.
Step 5
Bake for about 30 minutes at 200 degrees. It does not matter if it is a little longer in the oven. It can also be kept warm until severing in the oven, but then you have to turn down the heat a bit. Now this accessory is ready for serving. Feel free to try with lamb, fish, beef. Today was a very great dinner for us, served with beef mince and rice. The most important thing is that Ratatouille fits almost everything, is healthy and lasts several days in the fridge.
