I love caramel. It fits everything! Almost at least ...
Ingredients
- 300 gram sugar
- 1 dl water
- 80 gram dairy butter
- 3 dl whipping cream
- 1 tbsp maldon salt
Here you will get a very easy recipe that neither takes a long time, nor is very complicated! The only thing that is important to keep in mind is; Do not stir in the sugar!
Step 1
Use a steel pan.
Step 2
Add water and sugar. Stir until it is mixed BEFORE turning on the plate over medium-high heat (7/8).
Step 3
Remove the ladle / spatula from the pan. Now do not touch! Then the caramel will crystallize.
Step 4
When it starts to bubble and all the sugar is melted, it will get a golden brown tone eventually. The darker the color, the more bitter the caramel becomes. I like the medium brown. But you have to watch carefully, because it burns fast.
Step 5
When you have the desired color of the sugar, take the pan off the plate and add butter. Now you can touch. Put the pan back on the plate, now on medium heat, while stirring until everything is a smooth mass.
Step 6
Then add the cream little by little. When all of the cream is in, simmer the caramel for 2-3 minutes.
Step 7
The longer you cook it, the thicker the sauce will be. I usually let it cook for 2-4 minutes. Remember that it thickens when it has cooled.
Step 8
Season with maldon salt at the end.
