Salted meat with horseradish sauce and swede stew - Norwegian traditional food!

Salted lamb with this sauce is absolutely delicious!

Horseradish sauce

  • 2 tbsp butter
  • 2 tbsp wheat flour
  • 5 dl cooking broth / meat broth
  • 1,5 dl whipping cream
  • 1 tbsp finely grated horseradish
  • 1 tbsp finely chopped chives

Swede stew

  • 1 pcs swede
  • 1 pcs carrot
  • 3 tbsp butter
  • 1 dl whipping cream
  • 1 tsp ground nutmeg
  • Possibly some cooking broth
  • salt and white pepper
  • 1,2 kg salt meat
  • 12 pcs potatoes
  • swede stew
  • horseradish sauce
Ingredients

The dish originates from Western Norway and is probably still most popular in this area. Salt meat for me is from lamb. The most common to buy in the store is sliced bog or thigh. Many shops have salted meat lying around, otherwise you can also salt the meat yourself. I got my local butcher shop to salt lamb shanks and divide into slices.

Step 1

Start by rinsing the meat well under cold water. If the meat is very salty, it may be a good idea to leave it in a little water before putting it in the pan to cook the meat.

Step 2

Put the meat in a saucepan and pour on water so that it covers the meat and a little more. Remove the white foam that comes on top of the water at the start.

Step 3

The length of the cooking time will vary according to the thickness of the meat. Cook on fairly low heat for 2-3 hours. When the meat detaches nicely from the bone, it is ready.

Step 4

Swede stew. Cut swede and carrot into cubes and cook in unsalted water. Cook until completely tender and mash with a hand mixer together with butter, nutmeg, salt and pepper to a desired consistency. Step 5

The broth of the salt meat makes this sauce absolutely magical. Melt butter in a saucepan and stir in the flour until completely smooth. Carefully pour on the hot broth while stirring. Pour in cream, grated horseradish, nutmeg and cook for 10 minutes on low heat. Add chives just before serving. Step 6

Peel and cook the potatoes and this dish is now ready to be enjoyed. Put some swede stew and some potatoes on a plate. Add plenty of salted meat and pour over the good sauce. This is incredibly good! Good luck.
