- 200 gram shrimp
- 8 pcs raw scampi
- 300 gram spaghetti
- 1 pcs onion
- 2 tsp sugar
- 1 tbsp olive oil
- 4 cloves garlic
- 2 tsp chili flakes
- 2 tbsp tomato purée
- 2 dl white wine
- 1 can canned tomatoes
- 1 dl boiling water from pasta
- 1 skive lemon
- 1 tbsp butter
- 2 tbsp finely chopped parsley leaves
- salt and pepper
I tasted this delicious pasta dish with seafood and a delicious tomato sauce for the first time in Italy. You can vary the seafood with what is available, but mussels should be included as this gives a wonderful taste to the sauce. Here I will show you how to make this Italian classic at home.
Step 1
I start by finding the ingredients and checking the mussels. Rinse well in cold water and remove any "beard" from the mussels. Discard shells that are damaged in the shell or if they do not close if you squeeze them.
Step 2
Start by finding a pan that you have a lid for. Pour in good olive oil and add the onion, sugar and chili flakes. When the onion starts to get a nice golden color, it is time to add the garlic. Bake for 2 minutes before adding the tomato paste. Bake for another 5 minutes.
Step 3
Pour the mussels into the pan and mix them well with the tomato puree and onion mixture. Pour over 2 dl white wine and put on the lid. Let the mussels steam for 3-5 minutes until all have opened. Pick out the mussels when they are ready and place in a bowl.
Step 4
Boil good quality spaghetti in salted water. The spaghetti should be cooked 2-3 minutes shorter than what is on the package. Then the spaghetti is a little undercooked and it should finish cooking in the good sauce. IMPORTANT: do not pour the boiling water into the pasta. We'll use some of this in the sauce.
Step 5
Pour the canned tomatoes into the pan and cook for 10 minutes. Pour 1 dl boiling water from pasta into the sauce.
Step 6
Pour the slightly undercooked spaghetti into the sauce. It is extremely important to mix the pasta with the sauce. This makes the sauce stick to the pasta and gives a far better taste. Add raw scampi. Let the scampi soak together with the sauce for 2 minutes before adding the rest.
Step 7
Put the mussels back in the pan together with the prawns. Add a little lump of butter and stir well. Taste the sauce with a little lemon juice, salt and pepper. Finish by sprinkling over finely chopped parsley and now the dish is ready to be enjoyed. A classic Italian pasta dish with seafood.
This dish can be served individually or placed on a large platter to share. Good luck.
