Ingredients
Taffelsticks
- 3 pcs large potatoes
- 1 liter sunflower oil
Spice mixture
- 2 tsp salt
- 1 tsp paprika powder
- 1 tsp onion powder
- 1 tsp aromat
- 0,5 tsp cayenne pepper
I love taffelsticks and when have I found the recipe that is far better than the ones you can buy in the store. Crispy delicious thin sticks of potato with just the right spice mixture. Fun to be able to make the Saturday treat yourself. Homemade is always the best!
Step 1
Use large baked potatoes as these have a better shape, give a good taste and you get a nice size of the taffelsticks. I use a mandolin which makes the job quite easy, but you can also use a cheese grater and cut thin slices that you cut into strips.
Step 2
Put the potato strips in ice cold water and change the water a couple of times. This is to get the starch out of the potatoes. Transfer to paper towels and dry well before frying. Leave in the water for a minimum of 30 minutes.
Step 3
Pour sunflower oil into a large saucepan and heat up to about 170 degrees. At my induction peak, that equates to 7.5 on a scale of 1-9. When frying, always be careful. It is important that you do not add too much at a time, but fry little by little.
Step 4
Fry the potato in 2 rounds. Fry first until they start to get a little color and transfer to a drying roll again. It's the last round that creates magic. Then the potato strips turn into golden and completely crispy potato strips.
Step 5
Mix together the spices. Pour the taffelsticks into a steel bowl and sprinkle with spices. Throw them a little around in the bowl so they are evenly covered with spices. Taste to get them perfect for you.
Step 6
Now the best part remains !!! Place on a platter or in a bowl and serve. This is incredibly good and it's fun to make homemade snacks. Good luck.
