Tzatziki - Healthy and fresh dressing

This dressing is widely used in Greece and Turkey. It is based on natural yoghurt and is therefore a very healthy dressing. Suitable for spicy meat, chicken, barbecue, bread and in salads.

  • 5 dl Greek yogurt
  • 1 pcs cucumber
  • 2 cloves garlic
  • 1 pcs lemon (peel only)
  • 1 tsp lemon juice
  • a few drops of good olive oil
  • salt and pepper

I like Tzatziki because it is so easy to make and tastes fresh and good. At times if I am going to eat a little healthy there will often be tzatsiki with the food. Here you have a simple and quick recipe.

Step 1

Start by finding a bowl and pour the yoghurt into it. Then add the crushed garlic, lemon zest, a little salt and pepper and a few drops of olive oil.

Find a grater and grate the whole cucumber. As you probably know, cucumber contains a lot of water and you should not include it in the dressing. Then put the grated cucumber in a strainer or similar and press well until most of the water is gone and you are left with a solid lump of cucumber. Put the cucumber in the bowl together with the yoghurt.

Stir well and season with salt, pepper and possibly a little more lemon. Put on plastic and put in the fridge. Feel free to leave it, but you can eat it right away. It tastes almost better the next day, so feel free to make a slightly larger portion. A delicious fresh and healthy dressing. Good luck.
