Jerusalem artichoke soup with fried bacon - Warming and delicious!

Jerusalem artichoke has a wonderful nutty taste.

large portions
  • 500 gram Jerusalem artichoke
  • 6,5 dl chicken broth
  • 3,5 dl whipping cream
  • 1 tbsp butter
  • 3 pcs shallot
  • 1 tbsp finely chopped chives
  • 6 slices bacon
  • 1 tsp salt
  • freshly ground pepper

Jerusalem artichoke has been available in Norway for many years, but many have forgotten this wonderful tuber. It may taste a bit like artichoke and look a little weird, but the taste is absolutely beautiful. Here I have made a delicious Jerusalem artichoke soup together with crispy bacon and chives. If you have not tried to cook with Jerusalem artichoke before, just try. The season in Norway is from mid-August to the end of October.

Step 1

Start by peeling the Jerusalem artichoke with a regular "potato peeler" and add water so that it does not turn brown.

Find a pan and add butter and coarsely chopped shallots. Cook for a few minutes on medium heat until the onion is shiny and soft.

Step 5

Run the soup completely smooth with a hand mixer or blender and season with salt. Fry bacon quickly in a pan and let it drain on some parchment paper. Cut up bacon and chives and now you are ready to serve. Pour the soup into a soup bowl and sprinkle with fried bacon and chives. Finish with a few drops of olive oil and freshly ground black pepper. Good luck.
