Jerusalem artichoke soup with fried bacon - Warming and delicious!

Jerusalem artichoke has a wonderful nutty taste.

Ingredients

large portions
  • 500 gram Jerusalem artichoke
  • 6,5 dl chicken broth
  • 3,5 dl whipping cream
  • 1 tbsp butter
  • 3 pcs shallot
  • 1 tbsp finely chopped chives
  • 6 slices bacon
  • 1 tsp salt
  • freshly ground pepper

Jerusalem artichoke has been available in Norway for many years, but many have forgotten this wonderful tuber. It may taste a bit like artichoke and look a little weird, but the taste is absolutely beautiful. Here I have made a delicious Jerusalem artichoke soup together with crispy bacon and chives. If you have not tried to cook with Jerusalem artichoke before, just try. The season in Norway is from mid-August to the end of October.

Step 1

Start by peeling the Jerusalem artichoke with a regular "potato peeler" and add water so that it does not turn brown.

Find a pan and add butter and coarsely chopped shallots. Cook for a few minutes on medium heat until the onion is shiny and soft.

Cut the Jerusalem artichoke into smaller pieces and mix together the cream and chicken broth.

Pour the artichoke and cream mixture into the pan and simmer for 15-20 minutes until the artichoke has become completely soft.

Run the soup completely smooth with a hand mixer or blender and season with salt. Fry bacon quickly in a pan and let it drain on some parchment paper. Cut up bacon and chives and now you are ready to serve. Pour the soup into a soup bowl and sprinkle with fried bacon and chives. Finish with a few drops of olive oil and freshly ground black pepper.
