Tomato soup - homemade is so much better and healthier!

Tomato soup is very easy to make and it is so much healthier and better than these bag variants! Here I will show how easy it is to make a good and nutritious tomato soup. If you follow this recipe, you can serve tomato soup next time with lots of nutrition, a clear conscience and a smile on your face :-)

  • 6 pcs large tomatoes
  • 1 can canned tomatoes
  • 2 cloves garlic
  • 1 pcs red chili
  • 1 pcs red onion
  • 2 pcs shallots
  • 7 dl chicken broth

  • creme fraiche
  • basil
  • optional (eggs, pasta screws, bacon, etc.)

Step 1

I divide red onion, chili, garlic and shallot and put in a pan together with the tomatoes. Pour on a little olive oil salt, pepper and sugar. The reason I use a little sugar is that the tomatoes you buy in regular stores do not have as much sweetness as they should. Put the pan in the oven at 200 degrees to let them enjoy themselves there for 40 minutes. Baked tomatoes and vegetables give more sweetness and better taste in the soup.

Step 2

Find a saucepan and pour all the vegetables in the pan into it. Pour on the broth, cook for 10 minutes and run completely smooth with a hand mixer. It is incredibly important to taste just before serving. If necessary, add a little more salt, pepper or sugar so you get a good balance (good balance = tastes good and has enough acid, salt and sweetness).

Step 3

I think basil is very good with tomato. So I run some leaves with basil along with olive oil to a smooth mass. Take a spoon to put on some circles with basil and stirred sour cream. Feel free to garnish with a basil leaves and a few pieces of chili if you like it HOT :-) Good luck! It is also good with boiled eggs, bacon or pasta.
