Perfect as an appetizer or for the summer table.
Ingredients
Asparagus
- 8 pcs white asparagus
- 8 pcs green asparagus
- 5 dl water
- 1 tbsp butter
- 2 tsp salt
- 2 tsp sugar
- 0,5 pcs lemon (juice only)
- 4 skiver bacon
- chives
Hollandaise
- 2 pcs egg yolks
- 150 gram butter
- 0,5 pcs lemon (juice only)
- 2 tsp water
- 2 tsp white wine vinegar
- salt
Asparagus is incredibly good and when spring is well underway, the fantastic white asparagus comes. I think it is best to combine both in one dish since they have quite different tastes. With a little delicious hollandaise flowing over and a little fried bacon, you have a very good summer dish. Here I will show you how to prepare the asparagus in the best possible way for taste and consistency.
Step 1
The white asparagus must be peeled before you cook it and they need more cooking time than the green ones. Peel from just below the top and all the way down. Cut off the bottom 2-3 cm of the white asparagus.
Step 2
The greens do not need to be peeled and I break off the lower part as it can be a little bad.
Step 3
Fry bacon in a little oil in a frying pan. Place on baking paper so the fat drains off. Cut into thin strips that you will finally sprinkle over the dish. This gives a wonderful salty taste and goes very well with.
Step 4
To make hollandaise, put the egg yolks, water, white wine vinegar in a bowl. Melt the butter and heat it up. Whisk together the egg yolks over a water bath until thickened. Dilute with the hot butter. Make sure that the sauce does not get too hot as it may crack. Season with lemon juice and salt.
Step 5
Pour water, sugar, salt, lemon juice and butter into a large saucepan and bring to the boil. Add the white asparagus first. The whites should cook for 5-6 minutes. When there is 1 minute left of the cooking time, add the greens. When everything is ready, pick it up nicely and place it on the plate you are going to serve it on.
Step 6
Pour over hollandaise and sprinkle over a little fried bacon. Finish with a little finely chopped chives and serve. A wonderful summer dish! Good luck.
