Chicken thighs on the grill do not get better! Check out this method.
Ingredients
- 4 pcs chicken thighs with bones.
- 100 gram butter
- Rub / spice mixture
- BBQ sauce
This is a recipe for those who are well above average interested in Grill / BBQ. The method is taken from how they cook chicken thighs in BBQ competitions. So it takes a little extra work to make this recipe, but it is not difficult and the result will be the best chicken thighs you have most likely tasted. An incredibly good taste, crispy skin, layer upon layer of flavors and extremely juicy chicken.
Step 1
I buy good quality chicken thighs and split them at the bone. In this way I make Chicken pops from the upper part of the thigh and these delicious butter-grilled chicken thighs from the large part of the thigh. Here is the link to how to make Gladkokken's "Chicken lollipops" - Perfect on the grill! Divide the chicken and carefully cut out the bone. Remove the skin and scrape the inside of the skin with a knife so you get rid of extra grease on the skin. This makes the skin extra crispy when grilled. Cut off fat and possibly tendons from the thigh meat.
Step 2
Season the meat well on all sides with a homemade rub. You can also buy barbecue rub in some shops, but it is fun and easy to make yourself. I add a recipe for a classic rub that goes well with chicken. The secret behind the best barbecue food - Dry Rub
Step 3
When making this I recommend wearing disposable gloves. Shape the chicken thighs into small "balls" and pull the skin back over the meat. Sprinkle spices on the outside of the skin as well. Place on a tray.
Step 4
Leave overnight in a refrigerator covered with plastic. Rub`n spice mixture works as a dry marinade and extra good taste of the chicken. Transfer the chicken to a pan that can withstand and stand on the grill and fill well with pieces of butter around all the "balls".
Step 5
Make the grill stabilize at around 160 degrees and set the chicken thighs on indirect heat. Here they should be allowed to enjoy themselves at about the same temperature for 1 hour.
Step 6

Step 7
Continue to grill on indirect heat for about 15-20 minutes until the BBQ sauce has dried a little. I save on the butter from the pan and cool this down. The butter gets a taste of spices, smoke and chicken and becomes a perfect spice butter for later.
Step 8
Put the chicken thighs back in the pan and serve with delicious BBQ sauce. As an accompaniment you can have rice, potato salad, coleslaw, corn or the like. The result is an extremely juicy chicken with lots of delicious taste! Good luck.
