Broth is the key to making wonderful dishes. If you take the time to make broth, you can fill the freezer and it will be very easy to make quick good dinners later. Many of my recipes contain broth / bouillon and it also works of course to buy bouillon cube, but it is cheaper and tastes much better with homemade broth.
Ingredients
- 3 kg oxtail
- 3 pcs onion
- 2 pcs shallots
- 2 cloves garlic
- 2 pcs carrots
- 1 stl bay leaf
- 2 pcs chili wothout seeds
- fresh oregano
Broth made on oxtails is the very best meat broth. Beef tails are very cheap and the meat has a fantastic taste and consistency when cooked long enough. There will be some very good recipes on the site soon, so pick up a few kilos of beef tails next time you are in the store.
Step 1
Start by finding a large pan and place the oxtails with the marrow up. Pour on some neutral oil and set the oven at 220 degrees. Sprinkle with a little salt and pepper and put the oxtails in the oven. Cook for 20-25 minutes until the meat has a golden and nice color. This "color" gives the broth a much better taste and color.
Step 2
Find a large pan and heat it up. Start by cutting the onion into large pieces and place in the dry pan. Fry the onion for a few minutes until it starts to get a dark color on the cooking side.
Step 3
When the onion has a little crust, pour on neutral oil and add the rest of the vegetables and cook for a few more minutes.
Step 4
Now put all the browned oxtails in the pan and pour on cold water so that it just covers the meat. Add some fresh oregano and 1 bay leaf. Bring the water to a boil and remove the foam that forms on top of the water.
Step 5
Turn down the heat so it only simmers and leave for 4 hours. Strain the broth and pick out all the tails. Use a fork or your hands and pick off the delicious tender meat. Now you have lots of delicious broth and tender meat for more good dinners in the future.
