  • 4 tbsp Viking Milk Powder
  • 2 pcs onion
  • 2 cloves garlic
  • 2 pcs carrots
  • 1 pcs bay leaf
  • salt and pepper

A good broth is the key to changing good food into wonderful food. There are simpler alternatives such as bouillon cubes, but nothing can compare to making proper broth. This method was presented by one of the world's best chefs, Heston Blumenthal. I have done this several times and it is very easy. The result is fantastic chicken broth.


Pour the finished broth into ice cube bags, freezer bags or small boxes. If you take the time to do this, it will be very easy to cook good food in the future. Chicken wings are perfect for making broth. They contain bones, meat, fat and skin and are so cheap that you can throw them away afterwards with a clear conscience.

Thaw the chicken wings and place on a baking tray with baking paper. Pour over a little oil, salt and pepper.

Add Viking milk powder in a strainer and sift the milk powder over the chicken wings. This gives the wings a thicker crust with more flavor.

Bake in the oven at 200 degrees for 30 minutes and feel free to turn the chicken wings after about half an hour. It is important that they are properly browned, because that is where the taste lies.

Find a large pan and add a little oil. Start by frying the onion in a completely dry pan until it gets a dark side, but not burnt. This gives a delicious taste and nice color. Then add carrots, onions, garlic and bay leaves

Pour in all the browned chicken wings and add water so that it covers the chicken. Add some whole peppercorns and a bay leaf. Let simmer for two hours. Strain with all the broth and cool down.
