Beef Stroganoff ala Gladkokken - Perfect weekend dinner!

Beef Stroganoff is one of Russia's most famous dishes. If you think this is a boring dish you are making a terrible mistake!

  • 1 kg high ribs (beef)
  • 200 gram bacon
  • 2 pcs onion
  • 4 pcs shallots
  • 20 pcs mushroom
  • 2 dl sour cream
  • 2 dl whipping cream
  • 6 dl veal broth
  • 2 tbsp tomato puree
  • 1 tbsp sugar
  • 2 tbsp smoked peppers
  • 1 tbsp dijon mustard
  • 1 tbsp worcestersauce
  • 1 tbsp lemon juice
  • butter for frying
  • salt and pepper

The origins of this dish are debated, but most believe that the dish was created by a chef who won a cooking competition in St. Petersburg with this dish. The dish is named after the above-mentioned chef's employer, Alexander Sergeyevich Stroganov. I have been quite true to the original, but as usual I like to take the liberty to make some adjustments.

Step 1

Start by finding a frying pan and a large saucepan. Heat the pan and fry the bacon until golden and crispy. When the bacon is frying, I cut the steak into slightly thick strips. Season the meat with salt and pepper and fry on high heat in the bacon fat when the bacon is done. Fry a little and a little meat so it is fried and not cooked. Place the cooked meat in a bowl. When you have finished cooking all the meat, I put it back in the frying pan and add tomato puree, paprika spices, sugar and fry for 3-4 minutes. Add the veal broth, bring to the boil and turn down the heat so it just simmers. How long this needs to simmer depends on the tenderness of the meat. With high ribs, I let this simmer for about 2 hours.

Step 2

Melt butter in the pan and finely chop the onion, shallots and bacon you fried. Put this in the pan and cook on medium heat until the onion is completely soft. Then add cream, sour cream, dijon and worcester. Stir and simmer for 15 minutes. Now you can turn off the heat until the meat is done cooking.

Step 3

The magic happens when you mix the meat with the sauce together with the onion mixture. Pour the meat with the sauce into the pan and stir well. Add a little butter to the frying pan and fry the sliced mushrooms for a few minutes until it has taken on a little color. Then add the mushrooms to the pan along with the rest. Keep the stew warm until serving and season with lemon juice, salt and pepper.
