Gladkokken's Red Wine Casserole with Beef - Delicious taste and tender meat.
Sometimes it's perfect with all the food in the same pan!
Ingredients
- 1 kg high ribs of beef
- 100 gram bacon in cubes
- 1 flaske red wine (preferably fruity)
- 6 dl beef broth (good quality)
- 1 tbsp wheat flour (for the beef before frying)
- 2 cloves garlic
- 2 pcs onion
- 3 pcs carrot
- 1 pcs fennel
- 12 pcs potatoes
- 3 pcs bay leaf
- 1 kvist fresh thyme
Gladkokken's red wine casserole with beef is inspired by the classic French casserole dish Biff Bourgogne. I have made some adjustments that I think give an even better taste. Letting the potatoes soak in the same pan at the end of the cooking time gives good taste and makes it even easier and you get to gather the whole dinner in the same pan.
Step 1
Start by finding a large pot and a frying pan. Start by frying the bacon until they are crispy and good.
Step 2
Cut the vegetables into coarse pieces and place in the pan together with the bacon.
Step 3
Cut the meat into slightly larger pieces (3cm x 3cm). Season the meat with salt and pepper, and roll and sprinkle with a little flour. Fry a little and a little of the meat quickly in a very hot pan. When the meat is done frying, place it in the pan with bacon and vegetables.
Step 4
Pour over red wine and cook on high heat for 10 minutes. Stir occasionally.
Step 5
Pour over the beef broth, stir well and add the herbs and bay leaves. Boil the liquid in the pot and turn it down so that it only boils a little. (It is very important that it does not boil too much, but only a small bubble occasionally). Let it simmer for 2,5 hours on low heat.
Step 6
Wash or peel potatoes and divide into suitably large pieces. A suitably large piece should be easy to eat with a fork afterwards. Put the potatoes in the pot and simmer until the potatoes are tender and good. This takes about 30 minutes.
Step 7
Just before I serve the dish, I fry mushrooms quickly with a little butter, salt and pepper. Add the mushrooms to the pot and mix well.
Now the dinner is ready to be enjoyed. It is very good with a good glass of red wine for this dish. I recommend using the same wine in the pot and glass. Feel free to choose a fruity and good red wine. My best wine tip for this dish is a Garnacha from Spain. Good luck.
