- 1 handful fresh parsley

- neutral oil for frying
- salt and pepper
Delicious large tender pieces of high ribs that bathe in a lovely sauce. I again had the pleasure of talking to Lars Barmen and got some exciting tips. Beef in combination with dried fruit in a red wine-based sauce. Sounds a little weird, but the taste was amazing! In addition, this is a dish that is easy to make. When the pan is in the oven, just relax and wait for a lovely dinner while the good smells spread around the kitchen.
Step 1
Start by finding a frying pan and set on high heat. Also find a refractory pot. Cut the meat into large pieces and season with salt and pepper. Fry the meat little by little so that it has a nice crust. Once you have browned the meat, transfer it to the pot.
Step 2
Cut up parsley root, shallots, garlic and chili. Fry this in the same frying pan when you have finished frying the meat. When the onion starts to get color, I pour in red wine and chicken broth. Bring to the boil and pour over the meat in the refractory dish.
Step 3
Top with a little rosemary and star anise. Cover with a lid or aluminum foil. Put in a preheated oven at 150 degrees hot air. Now let the meat stand for 2 hours.
Step 4
Finely chop sun-dried tomato and dried apricot. When the meat has been left to stand for 2 hours, I take the pot out of the oven and remove the lid / foil. Now add the apricot and sun-dried tomato. Mix together and put the pot back in the oven. Leave for another 1 hour without a lid. Stir occasionally.
Step 5
Now the dish is ready to be enjoyed. I finish by sprinkling a little finely chopped parsley. You can also pour the food into a serving dish. I served this with rice and it was lovely and attracted all the good flavors in the sauce. A simple and extremely good dinner! Good luck.
