Oxtail ragout with pasta - With good time, this ingredient will be absolutely fantastic!

Ingredients
Oxtail ragout
- 1,5 kg oxtails
- 1 pcs onion
- 5 cloves garlic
- 2 pcs carrot
- 2 pcs celery sticks
- 2 dl white wine
- 2 pcs bay leaf
- 1 tbsp oregano
- 6 dl water
- 1 can good canned tomatoes
- a little fresh thyme
- salt and pepper
- good olive oil

This is a dish that takes some time, but the result is absolutely incredible. I used a pressure cooker today, which means that you save almost 75% of the time, but the recipe works just as well in a regular pan. Oxtails give a very good broth and the meat is incredibly tender. Serve with a delicious pasta and it's just to enjoy!
Step 1
Start by lubricating the oxtails with a little oil and add plenty of salt and pepper. Put in the oven under the grill until the meat has a nice crust.
Step 2
Finely chop the vegetables and find a large pan or pressure cooker.
Step 3
Put some olive oil in the pan and fry the vegetables for a few minutes. Add the white wines or white wine vinegar and let it boil almost out. Add the spices and herbs.
Step 4
Add the grilled oxtails and fill with water. If you cook in a regular pan, simmer the oxtails for about 4 hours. If you use a pressure cooker, cook at full pressure for 90 minutes.
Step 5
The meat is ready when it detaches easily from the bones. Pick the meat and reduce the sauce to the desired thickness. I run the sauce evenly with a hand mixer, but you can choose based on what you like best.
Step 6
Add the meat back to the sauce and simmer. Bring the pasta to the boil and add the pasta together with the sauce just before serving. Pour in 2-3 tablespoons of the boiling water and simmer with the sauce for 1-2 minutes. This means that the sauce and the pasta "unite" and the sauce sticks around on the pasta so this is perfect.
Step 7
Pour onto a plate and garnish with some herbs and sprinkle with some delicious grated parmesan. Now you can enjoy one of the very best pasta dishes I know of. Good luck.
