My best Italian Bolognese - Love of good food!

  • 200 gram pancetta (Italian smoked bacon)

  • 4 pcs carrot

  • 2 bokser good canned tomatoes
  • 7 dl bull broth
  • 1 tsp sugar
  • 2 dl white wine
  • 4 cloves garlic
  • salt and pepper

I often make simple everyday varieties, but this time I have made what I think is a perfect Bolognese sauce served with tagliatelle. To get the best taste, good ingredients and good time are required. There are many recipes and versions of this dish, but here is what I think is a very authentic recipe. Although it takes a long time, it is not that much work. The sauce needs some time to become absolutely perfect. I love good pasta dishes and this is one of the best. When I first make this dish I make a large portion so I have for 2-3 dinners.

Step 1

Start by peeling to cut up the vegetables. They should be cut into small cubes.

Step 2

Find a large pan and add plenty of olive oil. Pour over the vegetables and cook over medium heat. The vegetables should not be brown, but shiny and soft.

Now it's time to roast the meat that will be in our Bolognese. I have used pork, beef and pancetta. It is important to fry only little by little. This means that the meat is fried and not cooked. Fry on high heat for the meat before a golden color. I start with pancetta and then beef and finish with pork.

Step 4

Add the fried meat when it is done with the vegetables and continue the frying.

When you have finished frying the meat, I add the tomato paste and the sugar to the frying pan. Bake for 2 minutes before also pouring this into the pan with the rest. Finish by pouring the wine into the frying pan and bring to the boil. Then you get all the good flavors that have stuck in the frying pan. Also pour this into the pan.

Step 6

Now pour the beef broth into the pan together with the tomatoes.

Step 7

Bring all the contents of the pan to a boil and turn down to low heat. The bolognese should simmer for 2.5 - 4 hours. The longer this one cooks the better it gets. Season with salt and pepper.

Serve with good pasta and good with parmesan. This is also a perfect sauce for making lasagna. Good luck.
