The combination of freshly baked homemade baguettes, butter, fresh garlic and herbs is fantastic. When you also top these with a little grated parmesan, there is a danger that the accessories will be better than the food. Perfect for lasagna, salads, pasta, etc. Here I share my recipe and I can guarantee it is good!
Step 1
Start by mixing the dry ingredients in a food processor with a kneading hook. Mix together and dilute with water. Finish with the oil.
Step 2
Adjust with a little more flour or water if necessary. It should be a smooth dough that slips from the edges of the food processor. Let run for 15 minutes on medium speed. It may seem a bit long, but the result is better. Pour into a bowl and cover with plastic. Let rise for about 40 minutes until it has reached double size.
Step 3
Roll out the dough on a table and divide into 8 dough pieces. Knead well and shape them into mini baguettes.
Step 4
It's just nice if there is a little difference in shape. There is a bit of charm to homemade proper food. Leave to rise for 30 minutes or until the size has doubled again. Use a knife and push down so that the baguettes get a star shape on top. This gives a little variation in the crust and becomes the "template" when we cut and add the spice butter afterwards.
Step 5
Bake on top and bottom heat 220 degrees for about 25 minutes. If you have a steam function, turn on some steam. This causes them to rise further before the baguettes get crusty.
Step 6
Let them rest for 15 minutes and cut up with a sharp knife in the star shape you made. Put on well with spice butter and also press into the baguette. Finish by sprinkling on grated parmesan and bake for another 5-10 minutes at 220 degrees until the butter and cheese have melted and you have a crispy and nice crust. Serve hot and enjoy this amazing accessory. Good luck.
