Homemade pasta - The best pasta you make yourself!
I love pasta and think it's fun to make my own pasta.
Ingredients
- 100 gram Pasta flour (tipo 00 )
- 65 gram egg
- 5 gram salt
- 0,5 tsp olive oil
It does not take as long as many people imagine and is easier than you might think. There are only 3 ingredients and you do not need any fancy equipment. It will of course be a little easier with a pasta machine, but it works very well with a rolling pin. The result is a soft and good pasta. I will come up with more recipes with pasta in the future, but here is the basic recipe. When you make this you can make ravioli plates, tagliatelle, spaghetti, lasagne plates etc.
TIP: I usually weigh the eggs since they vary a lot in weight and I prefer to use a little more egg yolk than whole eggs.
Step 1
There are two options when making pasta dough. Either you use a kitchen machine or you make it the old good method. It takes 5-10 minutes to make the pasta dough. Start by pouring out flour on a clean bench and sprinkle with a little salt. Make a small hole in the middle and pour in the eggs. I often use a little more egg yolk than egg whites. Mix the flour and eggs and knead the dough well until it has a smooth and even consistency. If the dough is a little sticky, just add a little more flour to the kitchen workbench.

Step 2
When you have kneaded the dough well for a minimum of 5 minutes, wrap it in plastic wrap and place in the fridge. After 30 minutes, you are ready to roll out the pasta dough. Place flour well on the kitchen workbench and roll out into a thin dough. This is of course easiest with a pasta machine, but it works well with a good old rolling pin as well. Divide into spaghetti, ravioli or whatever to make.

When you make fresh pasta, it needs a very short cooking time. Boil in plenty of salted water for 2-4 minutes depending on the thickness of the pasta. Check that it is silky soft, but still has some chewing resistance.
