Pasta Carbonara is a classic - Simple and perfect!
Pasta Carbonara is so good! This is probably one of the most famous pasta dishes that exists and is made in countless different ways. There is no complete agreement on how this dish should actually be made. Some people use cream, while others are faithful to using only egg yolks. I use both as I think it gives the best result. Here comes my variation of this very good pasta dish.
Ingredients
- 2 pcs shallots
- 3 cloves garlic
- 1 pcs red chili without seeds
- 1 tbsp olive oil
- 1,5 dl whipping cream
- 300 gram bacon / pancetta
- 50 gram parmesan cheese
- 2 pcs egg yolks
- 0,5 pcs lemon (juice only)
- Good quality spaghetti
Step 1
I start by putting on a pan of water for the spaghetti. In the water you take a little oil and plenty of salt. When the spaghetti is boiling, you can prepare the rest of the dish. Find a large frying pan and add some good olive oil. Start by frying the bacon crispy and place on paper towels so the fat drains off.
Step 2
I fry shallots, chili and garlic on medium heat in the rest of the fat from the bacon in the pan.
Step 3
Then add the cream and let it boil a little together with the onion. Season with salt, pepper and lemon juice.
Step 4
Grate the parmesan and separate the eggs so you get 2 egg yolks.
Step 5
Finely chop some basil and now you are ready to finish the dish. The important thing about a carbonara is that you serve it right after it is done. This is not a dish that will be very good if it has to stand long before it is served. When the spaghetti is done, rinse off the water and put the spaghetti in the frying pan together with the cream and onion mixture. Add grated parmesan, egg yolks and basil.
Mix well and place on a plate. Sprinkle over finely chopped crispy bacon. Garnish with a little more parmesan, basil and pour over some good olive oil. Finish with a little freshly ground pepper. This is a fantastic pasta dish and I think this method gives the best result. Good luck.
