Broccoli and spinach soup with parmesan - Delicious taste and lots of nutrition!
Ingredients
- 1 pcs broccoli
- 150 gram spinach
- 7 dl vegetable broth
- 5 dl water
- 75 gram parmesan
- 1 pcs onion
- 3 cloves garlic
- salt and pepper
I love soups and when you make homemade soups you get lots of good taste and nutrition in your body. This is a low-calorie soup with lots of flavor. The Parmesan cheese gives a creamy and good taste and the spinach gives the soup a fresh and green colour. Here I will show you how to make this soup.
Step 1
Coarsely chop the broccoli, onion and garlic and place in a saucepan. I use the whole broccoli with the stem as well. Top up with water and vegetable broth. You can use homemade broth here, but bouillon cubes or vegetable broth also work well.
Step 2
Bring to the boil and leave to cook with the lid on for 20 minutes. This takes a long time to cook broccoli, but you get a lot of good flavor and it becomes very tender. Broccoli loses a lot of color when it cooks for a long time, so we also use spinach. After 20 minutes, I remove the lid and add the spinach and grated Parmesan cheese. Let the spinach soak in the boiling water for 1 minute.
Step 3
Now run the soup until smooth with an immersion blender or blender. Season with salt and pepper! Now this delicious and nutritious soup is ready to be enjoyed. Serve with a little extra parmesan, a few drops of olive oil and freshly ground pepper. Good luck.
