Creamy chicken soup with horseradish - Full of flavor and nutrition!
Ingredients
To the broth
- 1,7 liter water
- 1 tbsp whole coriander
- 1 tbsp whole pepper
- 3 skiver fresh ginger
- 2 pcs chili
Creamy chicken soup with horseradish
- 4 pcs chicken thighs
- 3 dl whipped cream
- 3 pcs carrot
- 6 pcs boiled potatoes
- 1 pcs celery root
- 1 pcs onion
- 4 cloves garlic
- 3 tbsp grated horseradish
- salt and pepper
- finely chopped parsley
Soups are so good and can be made in an incredible number of versions. Here comes a lovely soup made with chicken thighs, lots of vegetables and horseradish that gives a fresh and delicious taste. Feel free to vary with the vegetables you have. This is a soup that warms both body and soul. Here I will show you how.
Step 1
Start by finding a large pot and place the chicken thighs in it. Add cold water to cover the chicken, and add the spices and ingredients to the broth. When the water has boiled, I put the lid on and cook this for 40 minutes on medium heat. This gives a very good broth and the chicken becomes juicy and tender.
Step 2
Pick out the chicken thighs and strain the broth into a bowl. This broth is what we will use to make the soup. Rinse the pot and put back on the stove. Add butter, onion and garlic. Fry on medium heat until the onion starts to become glossy and soft. When the chicken has cooled down a bit, I pick off the skin and tear the chicken meat into smaller pieces. Put the chicken meat in a bowl/plate for a little later.
Step 3
Cut all the vegetables into cubes or small pieces. Then everything is ready to assemble the soup.
Step 4
Before I pour in the broth, I add some wheat flour or cornstarch together with the onion. This helps to thicken the soup a little to get a perfect consistency. Stir this in together with the onion and pour over the broth. Add all the vegetables except the horseradish. Now let this boil for 15 minutes.
Step 5
Now add the cream and grate the horseradish with a grater. Here you can taste a little, but 2-4 tablespoons of grated horseradish is perfect. Boil and season with salt and pepper. When I'm satisfied with both the taste and consistency, I turn down the heat to just around the boiling point and add the chicken. Let everything steep for a few minutes and the soups are ready.
Step 6
Feel free to garnish with a little parsley and I think it's very good with some bread and butter on the side when I eat soup. Now you can enjoy a delicious chicken soup! Good luck.
