Vietnamese Pho soup - Beef soup with noodles

The broth is the key to the magical taste!!

  • 2 kg oxtails /shortribs /beef legs
  • 2 pcs onion
  • 1 stor fresh ginger
  • 4 liter water
  • 2 cloves garlic
  • 4 pcs cardamom seeds
  • 3 pcs star anise
  • 2 tbsp coriander seeds
  • 1 pcs cinnamon stick
  • 1 dl brown sugar
  • 1 dl fishsauce
  • 4 pcs carnation

Pho soup

  • 2 liter Pho broth
  • 200 gram boiled beef (from the broth)
  • 200 gram raw beef
  • 4 pcs spring onion
  • 100 gram bean sprouts
  • 2 pcs chili
  • 2 pcs lime
  • 200 gram rice noodles
  • 1 handful coriander
  • 10 blader Thai basil

I tasted pho soup for the first time at a restaurant here in Oslo and at first taste I was very happy with this delicious noodle soup. The broth is the key to the good taste and in addition to broth there are delicious rice noodles, vegetables and meat. This soup warms both soul and body.

Start by finding a large pot and then I start by frying half the onion and half the ginger until it gets a slightly darker colour. Add the rest of the ingredients and the meat. Pour in cold water so that it just covers the meat and simmer for about 5 hours. Strain the broth and pick out the meat. Season to taste with salt and possibly fish sauce.

Now the rest of the job is very simple and you can vary what you want in your Pho soup. I used some of the meat that was cooked from the broth and some thin slices of raw beef. Cut up the vegetables and cut the meat into very thin slices.

Boil the rice noodles according to the instructions on the package and rinse well in cold water. Then you lose a lot of starch and you get a clearer soup. The noodles are quickly heated by the boiling broth.

Step 5

Now place thin slices of raw meat in a soup bowl and pour over boiling broth. Add some cooked meat, vegetables and noodles and pour over a little more of the boiling broth. Finish with a couple of slices of lime and serve. This is a very good soup and you can of course vary which vegetables and what kind of meat you want in your soup.
