One of Thailand's most popular dishes !!
Ingredients
- 2 pcs chicken breast
- 7 dl chicken broth
- 7 dl coconut milk
- 1 pcs galangal / ginger
- 3 pcs shallots
- 3 pcs lemongrass
- 1 pcs habanero chili / thai chili
- 1 liten bunt coriander
- 3 pcs spring onion
- 150 gram mushrooms / oyster mushrooms
- 2 tbsp palm sugar / brown sugar
- 0,5 dl fishsauce
- 0,5 dl lime juice
- 2 tsp chili oil
- 4 pcs Kaffir lime leaves
This soup is extremely good and sends the taste buds to a party! It may be that some of the raw materials can be a little difficult to obtain, but I will to the best of my ability come up with alternatives you can get in a regular store. This soup is extremely popular and there are many different versions. I have tried a couple of versions and this one is so good! It is very true to the traditional Thai cuisine and the origins of this dish.
Step 1
Start by pouring the chicken broth into a saucepan. You can also mix water and chicken broth if you want. In the pan, add the lemongrass, habanero, galangal and the stalks of the coriander. Cut everything into smaller pieces. A good tip for the lemon grass is to crush it a little with the not sharp side of the chef's knife before you cut it. This releases even more flavor. Also add fish sauce and brown sugar. Let this cook for 25 minutes so that all the ingredients create a beautiful broth that is the starting point for the soup.
Step 2
After the broth has boiled for 30 minutes, I use a strainer and pick up most of it so you are left with a clean broth. In Thailand, it is common to leave everything in the soup and then the person who eats can leave what is left. I think it is better to take this out, but you can choose for yourself. In the broth now I pour in coconut milk, chicken breast in pieces, mushrooms and chili oil. Bring to the boil and simmer for another 20 minutes. Then the chicken is ready.
Step 3
Now add lime juice, finely chopped parsley, fresh habanero chili and spring onion. It is important to taste the soup so you get a nice balance and the desired strength. I simmered in the soup for 1-2 minutes.
Step 4
Serve piping hot and feel free to add a little extra coriander and a few drops of chili oil as a topping. Now you can enjoy an extremely good Thai soup. Good luck.
