Making brown sauce is not difficult, but takes a little longer if you do not want to cheat.
Ingredients
- 4 tbsp butter
- 3 tbsp wheat flour
- 10 dl good broth
- salt and pepper
A brown sauce gets its color from the browning of the butter, which gives a very good taste to the sauce. Brown sauce consists of a thickening of browned butter, flour and a good broth. It is of course allowed to use bouillon cubes or fond, but if you have a good broth, the sauce will also be very good.
Brown sauce is most commonly served with meat dishes. I often adapt the taste of the sauce to the kind of food you serve. If you are making sauce for a veal dish, use veal broth or fond in the sauce. You can also taste it with mustard, goat cheese, herbs and spices.
The technique is the same, but you can vary the tastes.
Step 1
Add butter to a pan. Put the pan on a little over medium heat and let the butter melt.
Step 2
Add the flour and use a whisk to make a smooth mixture. Now you are going to brown this mixture and it will take some time. Whisk around regularly until the mixture has a dark and nice color.
Step 3
Add the broth of the thickener little by little while stirring. Fill with broth until you have a smooth and fine sauce with the consistency you want.
Step 4
Let the sauce cook for a minimum of five minutes so the taste of flour disappears.
Step 5
Taste the sauce with salt and pepper.
