Homemade mayonnaise - Starting point for many good dressings

Homemade mayonnaise tastes much better and is very quick to make.


  • 1 pcs egg yolk
  • 1 tsp dijon mustard
  • 3 dl sunflower oil
  • 1 tbsp water
  • 1 tsp lemon juice
  • a little salt

Mayonnaise is the starting point for many dressings so this recipe is just to learn. If you add a little garlic, you have an Aioli. I think mayonnaise is good and I usually make it myself. There are several methods for making mayonnaise and aioli. Here you can see the "trick" I showed for aioli. Where you can finish it in a jam jar with a hand mixer.

Start by finding a bowl and add egg yolk, Dijon mustard and white wine vinegar.

Mix well with a whisk before you start diluting with oil.

Dilute with the oil while whisking constantly. The mayonnaise will now get thicker and thicker. Lemon juice or water will make the mayonnaise airier and thinner in consistency. Dilute with water and season with lemon juice and a little salt.

Store in the refrigerator with plastic wrap over. Good luck.
