Whipped butter and good bread are perfect before or next to a good dinner!
Ingredients
- 500 gram dairy butter
- 150 gram dairy butter (for browning)
- 2 tbsp finely chopped oregano
- 2 tbsp finely chopped thyme
- 1 pcs lemon (peel only)
- 1 pcs lemon (juice only)
- 2 cloves garlic
- 1 tsp dijon mustard
- salt and pepper
Sometimes in restaurants they come out with freshly baked bread and a good butter. It can be an incredibly enjoyable start to a meal. Here I show you how to make an incredibly good whipped butter. The combination of regular whipped butter and browned butter is the key to the wonderful taste. If you add good fresh herbs, a little more acid and salt, it will be good. Here is the recipe.
Step 1
Start by whipping butter at room temperature until it becomes fluffy and white.
Step 2
Brown the butter until it turns nutty brown and you can smell it. Cool this butter.
Step 3
Finely chop herbs, grate the lemon peel and use the garlic press on the garlic. Mix this together and add in the white butter together with a little Dijon mustard. Add the lemon juice, salt and pepper and mix well.
Step 4
Dilute with the cooled browned butter while continuing to whip.
Step 5
Store in an airtight box in the refrigerator. Remember to take out butter well before serving so that it approaches room temperature when serving. This is incredibly good! Good luck.
