Bruschetta - simple and good leftover food!

Bruschetta is an Italian dish that is served in countless ways. What is always the same in the recipes is that fried bread and tomatoes are used. There are many options for what one can use on top. It is very good with a little cheese or pine nuts, but I usually make with the simple good Italian flavors.

  • 4 skiver good bread
  • 1 cloves garlic
  • 1 tbsp olive oil
  • 1 pcs red onion
  • 1 handful basil
  • 4 tomater tomatoes
  • 1 pcs red chili
  • 2 tsp balsamic
  • salt and pepper

It's smart to make Bruschetta if you have some bread leftovers that are starting to get a little dry. I like to combine the classic Italian flavors tomato, olive oil, onion and basil. Very easy to make and incredibly good! If this is leftover food, I happily eat leftovers :-)

Step 1

Start by slicing two slices of bread and adding a little olive oil on both sides. Heat a frying pan or place the bread slices directly on the grill. It is important that they are baked a little so that the bread has a crispy crust. When the bread is baked, it is easy to finish the rest of the ingredients.

Start by finely chopping red onions, chili and tomatoes. To get the best result, I take out the entrails in the tomatoes and only cut up the meat.

Put everything in a bowl and add a little olive oil, balsamic vinegar, finely chopped basil, salt and pepper. Stir well and let rest until the bread is done. When the bread is done baking, take a clove of garlic and rub over the bread. This gives the bread a faint, but delicious taste of garlic.

Fill the breads with the chopped vegetables and garnish with a little basil. Simple and good food made in less than 10 minutes. Alternatively, you can serve different toppings in fine bowls so guests can taste a little of each.
