Caprese ala Gladkokken - Delicious summer food!

The good olive oil with a little extra flavor makes the dish fantastic!

  • 6 pcs good quality tomatoes
  • 150 gram buffalo mozzarella
  • 1 pcs fresh basil
  • 3 tbsp olive oil
  • 1 pcs lemon (grated peel)
  • 1 cloves garlic
  • 1 tsp chili flake
  • 2 tsp balsamic
  • salt and pepper
Ingredients

Caprese is a classic Italian dish where the quality of the ingredients is crucial to the result. The dish is perfect as a lunch and is often found as one of several accessories on an Italian dinner table. It is the delicious fresh buffalo mozzarella combined with good tomatoes that should shine, but there are some flavors that take this dish to new heights for me.

Buy good ingredients!

Step 2

Wash the tomatoes well and wipe with some paper. I start with the oil so the good flavors settle a bit. Find a small bowl and add a crushed clove of garlic, grated lemon peel, chili flakes and balsamic vinegar. Stir and season with olive oil.

Step 3

Divide the tomato in half lengthwise and divide into thin slices. Feel free to let the tomatoes drain in a strainer if there is a lot of liquid in them. Cut the mozzarella cheese into slices and grate a good handful of basil.

Step 4

Find a dish or large plate and start by adding some of the good oil you have made. Add about half of the fresh basil and start placing the tomatoes in a circle at the end. Try to get an even distance between the tomatoes. Then place the cheese in a circle inside the tomatoes. Continue like this until you are completely in the middle. Finish with a little salt, pepper, basil and more of the good oil. Good luck!
