Burrito Bowl with chicken - colorful, healthy and good!

Ingredients

  • 3 dl rice
  • 600 gram chicken thighs without bones
  • 1 pcs salad
  • 1 pcs cucumber
  • 100 gram corn
  • 1 pcs sweet peppers
  • 2 pcs chili
  • 1 bag nachochips
  • 1 pcs pico de gallo /salsa
  • 1 pcs healthy guacamole (see recipe below)
  • 1 pcs spice mix / taco seasoning (see recipe below)
  • 1 pcs lime

Guacamole

  • 2 pcs avocado
  • 1 tbsp natural yogurt
  • 1 cloves garlic
  • 1 pcs lime (juice only)
  • salt and pepper

Spice mixture for chicken

  • 1 tbsp cummin
  • 1 tsp salt
  • 1 tsp cayenne pepper
  • 2 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp neutral oil
  • 1 pcs lime (juice only)

Pokebowl was very popular a couple of years ago and now the Burritbowl has become a trend. I will definitely make this again soon. Very simple, colorful and good vegetables and a dinner that is popular with both young and old. The nice thing is you can vary as much as you want and everyone can get what they like best.

Step 1

Start by boiling rice and let it cool down a bit. Mix together the spice mixture or use a finished bag of taco powder. Cut the chicken into strips and pour over spices, lime and oil. Mix well and leave to marinate a bit.

Make healthy guacamole by adding avocado, yogurt, garlic, lime and spices in a small blender. Run to a smooth mass.

Step 3

Step 4

Fry the chicken first on high heat until it gets a little crust and turn down the heat after this until the chicken is cooked through. You can also use chicken breast, but I think thighs are even better and become more juicy.

Step 5

Cut up the rest of the vegetables to the appropriate size and you are now ready to make a Burrito Bowl. Add a little rice to the bottom and place the different ingredients in a bowl or per plate. Add some nacho chips and some guacamole in the middle. Simple and very good dinner. Good luck.
