Burrito with chicken and oat rice - Perfect for dinner and lunch
Ingredients
Burrito with Oat rice
- 4,5 dl Willja oat rice
- 7 dl chicken broth
- 0,5 pcs lemon
- 3 tbsp finely chopped parsley leaves
- 1 tbsp butter
Vegetable mixture
- 1 pcs onion
- 1 pcs paprika
- 2 pcs jalapeno
Chicken and marinade.
- 3 pcs chicken fillet
- 1 tbsp neutral oil
- 2 tsp siracha chili sauce
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp pepper
Accessories
- 8 skiver bacon
- 1 dl chili mayonnaise
- 6 store tortilla chips
- 100 gram grated cheese
- 100 gram guacamole (optional)
A burrito can be filled with the flavors you love and here I have made a combination that is incredibly good! I have been using Wilja oat rice quite a bit lately and I have become very happy with this product. It absorbs well the flavor you cook it in and has a good consistency. So when I was going to make a burrito this time, I made a delicious Burritoris with oat Rice.

Cut the onions, peppers and jalapeños into strips and find a frying pan. I fry the bacon first in this pan. Put them on paper and fry the vegetables in the same pan afterwards.
Step 3
Measure out the oatmeal and put it in a pot. Pour over the correct amount of chicken broth. You can also use broth cubes. Leave to cook for 11-13 minutes without the lid. The liquid will almost completely disappear as it approaches the end of the cooking time. Taste that the consistency is good and turn off the heat. Add lemon juice, parsley and butter and stir well.
Step 4
Finish cooking the chicken in a pan and I usually heat the tortilla chips on top of the chicken instead of heating them in the oven. Prepare the other toppings you want in your burrito and you're ready to finish them.
Step 5
First put down a large tortilla wrap and start with the burrito rice. Place all ingredients on one half of the lefs. Then add chicken, bacon, vegetables, dressing and cheese. Fold into a large cylinder. Now roll this cylinder in aluminum foil. Before serving, cut the burrito in half in half and serve. I like to serve with some nacho chips, dip and extra lime.
